Ingredients
  

For the Tart Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter cold and cubed
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 2-4 tablespoons ice water

For the Filling:

  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 2 cups mixed exotic fruits mango, kiwi, and passion fruit

For the Glaze:

  • 1/4 cup apricot jam
  • 2 tablespoons water

Instructions
 

Prepare the Crust:

  • Mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
  • Add ice water, 1 tablespoon at a time, until dough forms.
  • Wrap and chill for 30 minutes.

Roll & Bake:

  • Roll out dough, fit into a tart pan, and blind bake at 350°F for 20 minutes.

Make the Filling:

  • Whip cream, sugar, and vanilla until stiff peaks form.
  • Spread over cooled crust.

Arrange the Fruit:

  • Neatly arrange sliced exotic fruits on top of the filling.

Glaze:

  • Heat apricot jam and water, brush over the fruit.

Notes

  • The crust can be made a day ahead to save time.
