- Shred cabbage and carrot finely. Sprinkle salt over cabbage and let sit for 10 minutes. Squeeze out excess moisture using a kitchen towel.
- In a bowl, combine cabbage, carrot, egg (or flax egg), flour, baking soda, herbs, salt, and pepper. Mix gently. Let rest 5–10 minutes.
- Preheat air fryer to 375°F (190°C). Form mixture into patties about 1/2 inch thick. Lightly brush or spray with oil.
- Place fritters in air fryer basket on parchment paper with holes. Air fry for 3–4 minutes per side until golden brown and crispy.
- Remove carefully and serve hot with dipping sauce or as a snack.
