Ingredients
  

  • 2 cups finely shredded cabbage
  • 1 medium carrot grated
  • 1 large egg or flax egg for vegan option
  • 3 tablespoons all-purpose flour or almond/gluten-free flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh herbs optional
  • 1 tablespoon olive oil or cooking spray

Method
 

  1. Shred cabbage and carrot finely. Sprinkle salt over cabbage and let sit for 10 minutes. Squeeze out excess moisture using a kitchen towel.
  2. In a bowl, combine cabbage, carrot, egg (or flax egg), flour, baking soda, herbs, salt, and pepper. Mix gently. Let rest 5–10 minutes.
  3. Preheat air fryer to 375°F (190°C). Form mixture into patties about 1/2 inch thick. Lightly brush or spray with oil.
  4. Place fritters in air fryer basket on parchment paper with holes. Air fry for 3–4 minutes per side until golden brown and crispy.
  5. Remove carefully and serve hot with dipping sauce or as a snack.
