Ingredients
  

  • 15 oz canned young jackfruit in brine or water drained and patted dry
  • ¼ cup all-purpose flour or gluten-free alternative
  • ¼ cup ground flaxseeds + ¾ cup water flax “egg”
  • 1 cup panko breadcrumbs
  • tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian herbs
  • Salt to taste
  • Optional: avocado oil spray

Method
 

  1. Preheat air fryer to 400°F.
  2. Bowl 1: Seasoned flour
  3. Bowl 2: Flax egg mixture (ground flax + water, whisked)
  4. Bowl 3: Panko breadcrumbs mixed with nutritional yeast, garlic powder, onion powder, paprika, Italian herbs, and salt.
  5. Coat each jackfruit piece in flour, then dip into flax egg, and finally coat with seasoned panko.
  6. Place nuggets in air fryer basket in a single layer, ensuring even spacing. Lightly spray with oil if desired.
  7. Air fry at 400°F for 12–15 minutes, flipping halfway through, until golden and crispy.
  8. Serve immediately with your favorite dipping sauces.

Notes

Ensure jackfruit is well-drained and patted dry for maximum crispiness. Experiment with different spice blends like Cajun, curry, or Old Bay for variety. Store cooked nuggets in an airtight container for up to 3 days, or freeze for longer shelf life. Adjust air fryer time depending on model; check for golden-brown color.
