Ingredients

  • 4 salmon fillets
  • 8 fresh carrots peeled and sliced
  • 2 tablespoons maple syrup
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme chopped

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a bowl, toss the sliced carrots with olive oil, maple syrup, salt, and pepper. Spread the carrots evenly on the prepared baking sheet.
  • Place the salmon fillets on the baking sheet, nestled among the carrots. Drizzle the fillets with olive oil, then season with salt, pepper, and fresh thyme.
  • Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Remove from the oven and let rest for 2-3 minutes before serving.

Notes

  • To enhance flavor, consider marinating the salmon for 30 minutes before cooking. Use a mix of olive oil, garlic, lemon juice, and herbs.
  • Pair the dish with steamed asparagus or a light green salad for a complete meal.
