Prepare the Fish: Pat the black drum fillets dry with paper towels.
Season: Sprinkle salt, pepper, garlic powder, and paprika (or Cajun seasoning) evenly on both sides of the fillets.
Pan-Fry Method: Heat oil in a skillet over medium heat. Once hot, add the fillets skin-side down. Cook for 3–4 minutes on each side until the fish flakes easily with a fork.
Bake Method: Preheat your oven to 400°F (200°C). Place fillets on a baking sheet lined with parchment. Bake for 14–17 minutes, or until opaque and flaky.
Rest and Serve: Let the fish rest for 2–3 minutes before serving. Add a squeeze of lemon and, if you like, a little butter and fresh parsley on top.
