Method
- Toast black sesame seeds in a dry pan over medium-low heat until fragrant. Grind into a fine powder.
- Bloom gelatin in cold water for 5 minutes.
- In a saucepan, combine cream, coconut milk, sugar, and vanilla. Heat gently until warm (do not boil).
- Remove from heat and stir in bloomed gelatin until fully dissolved. Mix in black sesame powder.
- Strain mixture into ramekins or molds for a silky texture. Cool to room temperature, then refrigerate for at least 4 hours.
- For brown sugar syrup, combine sugar and water in a small pan. Simmer for 5 minutes, stir in vanilla, and allow to cool slightly.
- Unmold panna cotta, drizzle with syrup, and serve chilled.
Notes
For extra flavor, replace part of the cream with Greek yogurt or crème fraîche. Optional garnish: toasted sesame seeds, matcha powder, or fresh berries. Use agar-agar instead of gelatin for a vegan-friendly version; adjust setting time according to package instructions.
