Ingredients
  

  • 3 tbsp black sesame seeds
  • 250 ml heavy cream
  • 150 ml coconut milk
  • 50 g sugar adjust to taste
  • 1 tsp vanilla extract
  • 2 tsp powdered gelatin or agar-agar for vegan option
  • 2 tbsp cold water for blooming gelatin
  • Brown Sugar Syrup:
  • 3 tbsp dark brown sugar
  • 2 tbsp water
  • 1/2 tsp vanilla extract

Method
 

  1. Toast black sesame seeds in a dry pan over medium-low heat until fragrant. Grind into a fine powder.
  2. Bloom gelatin in cold water for 5 minutes.
  3. In a saucepan, combine cream, coconut milk, sugar, and vanilla. Heat gently until warm (do not boil).
  4. Remove from heat and stir in bloomed gelatin until fully dissolved. Mix in black sesame powder.
  5. Strain mixture into ramekins or molds for a silky texture. Cool to room temperature, then refrigerate for at least 4 hours.
  6. For brown sugar syrup, combine sugar and water in a small pan. Simmer for 5 minutes, stir in vanilla, and allow to cool slightly.
  7. Unmold panna cotta, drizzle with syrup, and serve chilled.

Notes

For extra flavor, replace part of the cream with Greek yogurt or crème fraîche. Optional garnish: toasted sesame seeds, matcha powder, or fresh berries. Use agar-agar instead of gelatin for a vegan-friendly version; adjust setting time according to package instructions.
