Blistered Charred Broccolini with Chili and Lemon Zest

Broccolini charred hard in a cast-iron skillet, then tossed with garlic, chili flakes, and lemon for a fast, smoky-bright side dish.

Ingredients
  

  • 2 bunches broccolini (about 450 g); trimmed
  • 3 tbsp olive oil divided
  • 1/2 tsp flaky sea salt plus more to taste
  • 1/4 tsp black pepper
  • 3 cloves garlic thinly sliced
  • 1 tsp red pepper flakes or 1 fresh red chili, thinly sliced
  • 1 lemon zested and juiced
  • 2 tbsp almonds toasted and roughly chopped, optional
  • 20 g parmesan shaved, optional

Method
 

  1. Trim the tough bottom inch off each broccolini stalk and halve any stems thicker than a pencil lengthwise, so every piece chars at the same rate. Pat completely dry with a towel, wet stalks steam instead of blister.
  2. Set a 30 cm / 12-inch cast-iron skillet over high heat for 2 to 3 minutes, until it's just starting to smoke.
  3. Add 1.5 tbsp olive oil and half the broccolini in a single layer. Let it sit undisturbed for 3 minutes until deep black spots form on the undersides.
  4. Toss and cook 2 more minutes, until the stalks are tender-crisp when pierced with a knife tip and most pieces show char on at least one side. Transfer to a plate.
  5. Repeat with the remaining oil and broccolini, giving the pan a few seconds to reheat between batches.
  6. Return all the broccolini to the skillet off the heat. Add the sliced garlic and chili flakes, and toss for 30 seconds using the residual heat, just until the garlic turns fragrant and pale gold.
  7. Add the lemon zest, lemon juice, salt, and black pepper. Toss to coat.
  8. Pile onto a platter and scatter with toasted almonds and shaved parmesan if using. Serve right away while the edges are still crackling.

Notes

  • Pat broccolini fully dry before it touches the pan.
  • Don't stir for the first 3 minutes, that's how you get real char.
  • Add garlic off direct heat to keep it from turning bitter.
  • Char in two batches, crowding the pan steams instead of blisters.
  • Squeeze lemon juice on right before serving.
