Ingredients
  

  • 1 can of pork 12 oz
  • 1 tablespoon vegetable oil
  • 1 medium onion diced
  • 1 bell pepper diced
  • 1 cup sweet corn fresh or canned, drained
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon apple cider vinegar
  • 2 cloves garlic minced
  • Fresh herbs for garnish e.g., parsley or chives

Instructions
 

  • Prepare the Pork: Open the can of pork and drain the liquid.
  • Heat the Oil: In a large pan, heat the vegetable oil over medium heat.
  • Cook the Onions: Add the diced onion to the pan and sauté until translucent, about 3-4 minutes.
  • Add the Pork: Add the canned pork to the pan and let it brown slightly, stirring occasionally.
  • Season: Sprinkle in the smoked paprika, salt, and black pepper. Stir to combine.
  • Add Vegetables: Add the diced bell pepper and sweet corn to the pan. Cook for another 5 minutes, stirring occasionally.
  • Finish with Garlic and Vinegar: Add the minced garlic and apple cider vinegar to the pan. Stir well and cook for another 2 minutes.
  • Serve: Garnish with fresh herbs and serve hot.
