Prepare the Ricotta Mixture:
- In a large mixing bowl, whisk eggs and sugar until pale and fluffy.
- Gently fold in the Brocciu cheese, ensuring a smooth, lump-free texture.
- Add lemon zest and vanilla extract, mixing until combined.
Preheat and Grease:
- Preheat your oven to 350°F (175°C).
- Grease a round or rectangular baking dish with butter or line it with parchment paper.
Bake:
- Pour the cheese mixture into the prepared dish.
- Bake for 35-40 minutes or until the top is lightly golden and a toothpick inserted comes out clean.
- Remove from oven and allow it to cool in the dish.
Serve:
- Once cooled, drizzle with honey or dust lightly with powdered sugar.
- Slice and serve at room temperature or slightly chilled, paired with fresh berries or citrus slices.
