Ingredients

  • 1 ripe pineapple peeled and chopped
  • 1- inch fresh ginger root thinly sliced
  • 2 stalks lemongrass lightly crushed
  • 3-4 tablespoons Costa Rican honey or any high-quality honey
  • 6 cups water
  • Ice cubes for serving cold
  • Optional: mint sprigs and pineapple slices for garnish

Method

  1. Prepare the pineapple: Peel the pineapple and cut it into small chunks, keeping any juices from cutting.
  2. Simmer the ingredients: In a large saucepan, combine water, chopped pineapple, ginger, and lemongrass. Bring the mixture to a gentle simmer and let it cook for about 10-15 minutes.
  3. Add honey: Once the tea is a rich golden color, remove it from the heat and stir in the honey. Mix until it’s fully dissolved.
  4. Strain and cool: Strain the tea to remove the fruit and herb pieces. Allow it to cool slightly, then refrigerate for at least 1 hour if serving cold.
  5. Serve: To serve chilled, pour over ice and garnish with a sprig of mint or a pineapple slice. For a warm option, pour directly into cups and enjoy as is.

Notes

  • Use Fresh Ingredients: Fresh pineapple and ginger are key for authentic flavor. Fresh ingredients give the tea a natural sweetness and brightness that make it taste like a tropical escape.
  • Versatile: This tea can be enjoyed hot or cold, making it a great drink year-round. Add ice on hot days or serve warm for a comforting treat.
  • Adjust Sweetness: Feel free to adjust the honey level to your taste, depending on how sweet you prefer your tea.
