Prepare the pineapple: Peel the pineapple and cut it into small chunks, keeping any juices from cutting.
Simmer the ingredients: In a large saucepan, combine water, chopped pineapple, ginger, and lemongrass. Bring the mixture to a gentle simmer and let it cook for about 10-15 minutes.
Add honey: Once the tea is a rich golden color, remove it from the heat and stir in the honey. Mix until it’s fully dissolved.
Strain and cool: Strain the tea to remove the fruit and herb pieces. Allow it to cool slightly, then refrigerate for at least 1 hour if serving cold.
Serve: To serve chilled, pour over ice and garnish with a sprig of mint or a pineapple slice. For a warm option, pour directly into cups and enjoy as is.
