  • 1 teaspoon vanilla extract optional
  • Optional: 4 oz cream cheese softened
  • Optional: 2 tablespoons brown sugar

Method
 

  1. In a large bowl, whisk together pumpkin puree and instant vanilla pudding mix until smooth.
  2. Add pumpkin pie spice and vanilla extract. Stir well.
  3. If using, beat softened cream cheese until smooth, then fold it into the pumpkin mixture.
  4. Gently fold in whipped topping. Mix carefully to keep it light and fluffy.
  5. Cover and chill in the fridge for at least 1 hour before serving.
