  • 1 cup rolled oats
  • ½ cup cricket flour
  • ½ cup peanut butter or almond butter
  • 10 –12 soft dates pitted
  • 2 tbsp honey or maple syrup
  • ¼ cup dark chocolate chips
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: cinnamon chia seeds, cocoa powder

Method
 

  1. Blend oats and cricket flour until fine.
  2. Add dates, nut butter, and honey; blend to form a sticky dough.
  3. Mix in chocolate chips and vanilla with a spoon.
  4. Press mixture into a parchment-lined pan.
  5. Chill 1 hour to firm the texture.
  6. Slice into bars and store refrigerated.

Notes
