- Wash and scrub the potatoes. Cut them into even ½-inch cubes.
- Soak the potato cubes in cold water for about 10 minutes to remove extra starch.
- Drain and pat the cubes completely dry using a clean kitchen towel.
- Preheat your air fryer to 380°F.
- In a large bowl, toss the cubes with olive oil, garlic powder, thyme, lemon juice, and salt.
- Spread the seasoned potatoes in a single layer in the air fryer basket.
- Cook for 20-25 minutes, shaking the basket halfway through for even browning.
- Once golden and crisp, remove from the air fryer and serve hot.
