Preheat the Oven – Set your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Prep the Carrots – Peel the carrots and cut them into uniform batons (about the size of thick-cut fries).
Season the Carrots – In a bowl, toss the carrots with olive oil, garlic powder, cayenne pepper (if using), salt, and black pepper until evenly coated.
Arrange on Baking Sheet – Spread the carrots in a single layer on the prepared baking sheet. Avoid overcrowding to ensure even roasting.
Roast – Place in the oven and roast for 20 minutes.
Add Parmesan – After 20 minutes, sprinkle freshly grated Parmesan over the carrots and return them to the oven. Roast for another 5-7 minutes until the cheese melts and turns golden brown.
Garnish & Serve – Remove from the oven, sprinkle with fresh parsley or dill, and serve immediately.
