Homemade Wild Garlic and Ricotta Ravioli in Butter

Fresh egg pasta stuffed with drained ricotta and blanched wild garlic, boiled briefly and tossed in browned butter.

Ingredients
  

Pasta Dough
  • 300 g 00 flour plus extra for dusting
  • 3 large eggs
  • 1 pinch fine sea salt
  • 1 tsp olive oil optional
Wild Garlic Ricotta Filling
  • 250 g whole-milk ricotta drained 15 minutes
  • 80 g wild garlic leaves blanched, squeezed dry, finely chopped
  • 60 g grated parmesan
  • 1 egg yolk
  • 1/4 tsp nutmeg freshly grated
  • 1/2 lemon zest lemon
  • salt and black pepper to taste
Butter Finish
  • 60 g unsalted butter
  • 15 g wild garlic leaves thinly sliced, raw
  • 30 g grated parmesan for serving
  • black pepper to taste

Method
 

Make the Pasta Dough
  1. Mound the flour on a work surface, crack the eggs into the center, add salt, and whisk with a fork before drawing in flour from the edges.
  2. Knead 8 to 10 minutes until the dough is smooth and elastic. Wrap in plastic and rest 30 minutes at room temperature.
Make the Wild Garlic Filling
  1. Blanch wild garlic leaves in boiling water for 30 seconds, then shock in ice water. Squeeze dry in a towel and chop finely.
  2. Mix ricotta, parmesan, chopped wild garlic, egg yolk, nutmeg, lemon zest, salt, and pepper in a bowl until smooth.
Shape the Ravioli
  1. Roll the dough into thin sheets, about 1mm thick, using a pasta machine or rolling pin, keeping unrolled dough covered.
  2. Spoon teaspoons of filling 4 cm apart on one sheet, brush water around each mound, top with a second sheet, and press out air. Cut into squares or rounds and seal edges firmly.
Cook and Finish
  1. Bring a large pot of well-salted water to a gentle boil. Cook ravioli in batches for 3 to 4 minutes, until they float and the edges feel tender, not gummy.
  2. Melt butter in a skillet over medium heat until it smells nutty, add sliced wild garlic, and cook 1 minute. Toss in the drained ravioli, plate, and top with parmesan and black pepper.

Notes

  • Drain ricotta well or the filling turns watery and ravioli split during boiling.
  • Rest pasta dough covered for 30 minutes before rolling, it relaxes and rolls thinner.
  • Blanch wild garlic no more than 30 seconds, longer turns it dull and slightly bitter.
  • Work with one dough sheet at a time and cover the rest so it doesn't dry out.
