  • 2 lbs Honey Gold Potatoes
  • 3 tbsp Extra Virgin Olive Oil
  • 1 tsp Sea Salt
  • 1/2 tsp Cracked Black Pepper
  • 1 tbsp Fresh Rosemary chopped
  • 2 Garlic Cloves minced

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash the potatoes and pat them dry. If larger, cut them into halves or quarters for even cooking.
  3. Toss the potatoes with olive oil, salt, pepper, chopped rosemary, and minced garlic in a large bowl.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, or until golden brown and crisp, turning halfway through.
  6. Remove from oven and let cool slightly before serving.

  • For an extra crispy finish, broil the potatoes for 2-3 minutes at the end of cooking.
