Method
- Preheat your oven to 425°F (220°C).
- Wash the potatoes and pat them dry. If larger, cut them into halves or quarters for even cooking.
- Toss the potatoes with olive oil, salt, pepper, chopped rosemary, and minced garlic in a large bowl.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until golden brown and crisp, turning halfway through.
- Remove from oven and let cool slightly before serving.
Notes
- For an extra crispy finish, broil the potatoes for 2-3 minutes at the end of cooking.
- Feel free to experiment with other herbs and spices like thyme or paprika.
