  • 1 frozen pork loin about 3-4 lbs
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1/2 tsp thyme
  • 1/2 cup chicken broth for basting

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Mix salt, pepper, garlic powder, rosemary, and thyme in a bowl.
  3. Rub the olive oil over the frozen pork loin. Then, press the seasoning mix onto all sides of the loin.
  4. Place the pork loin on a roasting pan. Pour chicken broth around the pork in the pan.
  5. Roast in the preheated oven. Expect to cook for about 50% longer than a thawed loin, approximately 1.5 to 2 hours, depending on the size.
  6. Baste the pork loin with the pan juices every 30 minutes.
  7. Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C).
  8. Let the pork loin rest for 10-15 minutes before slicing. This helps the juices redistribute.
