Ingredients
  

  • 1 lb organic ground chicken
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika optional
  • 1 cup spinach chopped
  • 1/2 cup zucchini diced
  • 1/4 cup feta cheese or dairy-free alternative optional
  • Avocado oil or slices for garnish
  • Fresh herbs basil, oregano for garnish

Instructions
 

  • In a bowl, mix olive oil, minced garlic, salt, pepper, and smoked paprika. Add ground chicken to the marinade and let sit for at least 30 minutes.
  • Heat a skillet over medium flame. Add the marinated chicken, cooking thoroughly until golden brown.
  • Halfway through cooking, add the spinach and zucchini, mixing well to ensure even cooking.
  • Once cooked, remove from heat and if using, sprinkle feta cheese over the hot chicken to melt slightly.
  • Garnish with avocado slices and fresh herbs before serving.
