Ingredients
  

  • 2 lbs fresh parsnips peeled and chopped

  • 1/2 cup olive oil
  • Salt to taste
  • Black pepper to taste
  • 2 –4 tbsp cream or butter for mashing
  • Optional: fresh thyme or rosemary

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Peel parsnips and cut them into even pieces for consistent roasting.
  3. Line a baking pan with parchment paper for easy cleanup.
  4. Toss parsnip pieces with olive oil, maple syrup, salt, and pepper.
  5. Spread coated parsnips in a single layer on the baking pan.
  6. Roast for 30–35 minutes until golden, caramelized, and tender.
  7. Transfer roasted parsnips to a bowl while still warm.
  8. Add cream or butter to enhance richness and smooth texture.
  9. Mash using a potato masher for rustic consistency.
  10. Blend in a food processor for a silky, creamy mash.
  11. Taste and adjust seasoning with salt, pepper, or extra maple syrup.
  12. Fold in herbs like thyme or rosemary for added aroma.

Notes

Roast parsnips until deeply caramelized for the richest flavor. Add cream gradually to control texture. A food processor makes the mash silky, while hand-mashing keeps it rustic. Reheat gently to preserve creaminess, especially when preparing ahead for holiday meals.
