- 2 cups of Peruano beans soaked overnight
- 1 pound of pork cut into cubes
- 1 large onion finely chopped
- 3 garlic cloves minced
- 2 tablespoons of aji panca paste
- 1 red bell pepper diced
- 6 cups of water or broth
- 2 teaspoons of cumin
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
- Fresh cilantro for garnish
Prep the Beans: Rinse the soaked beans.
Brown the Pork: In a large pot, heat the oil over medium heat. Add pork cubes and brown them evenly. Remove and set aside.
