Roasted Sweet Potato Tacos with Black Beans and Lime

Sheet-pan roasted sweet potatoes and skillet black beans get piled into charred tortillas with a lime crema, ready in about 40 minutes.

Ingredients
  

Roasted sweet potatoes
  • 700 g sweet potatoes (about 2 large); cut into 1.5 cm cubes
  • 3 tbsp olive oil divided
  • 1.5 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 3/4 tsp salt plus a pinch for the beans
  • 1/4 tsp black pepper
Black beans
  • 1 can black beans (425 g); drained and rinsed
  • 2 cloves garlic minced
  • 2 tbsp lime juice divided; 1 tbsp for beans, 1 tbsp for crema
Crema and assembly
  • 8 corn tortillas small (15 cm)
  • 100 g sour cream (about 1/2 cup); or plain yogurt
  • 1 tsp lime zest
  • 1/2 red onion small; thinly sliced
  • 1/4 cup cilantro chopped
  • 40 g cotija cheese (about 1/3 cup); crumbled, optional

Method
 

Roast the sweet potatoes
  1. Heat the oven to 425 F / 220 C. Line a sheet pan (33 x 46 cm / 13 x 18 inch) with parchment.
  2. Toss the sweet potato cubes with 2 tbsp olive oil, cumin, smoked paprika, chili powder, salt, and pepper in a large mixing bowl until evenly coated.
  3. Spread the sweet potatoes in a single layer on the sheet pan, giving them space so they roast instead of steam. Roast for 22 to 25 minutes, flipping once halfway, until the edges are caramelized and a fork slides in easily.
Warm the black beans
  1. While the sweet potatoes roast, heat the remaining 1 tbsp olive oil in a 10-inch skillet over medium heat. Add garlic and cook for 30 seconds until fragrant.
  2. Add black beans and 1 tbsp lime juice, stir, and cook for 4 to 5 minutes until warmed through and slightly thickened. Season with a pinch of salt.
Make the crema and assemble
  1. Whisk the sour cream, remaining 1 tbsp lime juice, and lime zest together in a small bowl until smooth.
  2. Warm the tortillas one at a time in a dry skillet over medium heat, about 20 seconds per side, until pliable and lightly charred in spots.
  3. Layer black beans and roasted sweet potatoes onto each tortilla. Top with sliced red onion, cilantro, cotija, and a drizzle of lime crema.
  4. Serve immediately while the tortillas are still warm.

Notes

  • Give the sweet potatoes real space on the pan for caramelized edges
  • Rinse canned black beans well before seasoning
  • Warm tortillas fresh each time, don't reheat them ahead
  • Make the crema right before serving for the brightest lime flavor
