Smoky Grilled Portobello Mushroom Burgers with Aioli

Whole portobello caps marinate in balsamic vinegar and soy sauce, then grill until charred and tender, stacked on a toasted bun with garlic aioli.

Ingredients
  

For the Mushrooms
  • 4 portobello mushroom caps caps (4 to 5 inches / 10 to 13 cm each); stems removed, gills scraped out
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 tbsp soy sauce or tamari for gluten-free
  • 2 cloves garlic, minced for the marinade
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Garlic Aioli
  • 1/2 cup mayonnaise vegan mayo works as a swap
  • 1 clove garlic, minced for the aioli
  • 1 tsp lemon juice
For Assembly
  • 4 burger buns split
  • 1 cup arugula
  • 1 tomato sliced
  • 1/4 red onion thinly sliced
  • 4 slices provolone cheese optional

Method
 

Marinate and Prep
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, soy sauce, 2 minced garlic cloves, smoked paprika, salt, and pepper.
  2. Wipe the portobello caps clean with a damp paper towel. Remove the stems and scrape out the gills with a spoon so the caps sit flat and don't pool liquid.
  3. Set aside 2 tablespoons of the marinade for basting later. Brush the rest over both sides of the mushroom caps and let them sit at room temperature for 15 minutes.
Grill
  1. Heat a grill or 12-inch cast-iron grill pan to medium-high, about 204 C / 400 F.
  2. Place the caps gill-side down first and grill for 4 to 5 minutes, until grill marks form and the underside releases its liquid.
  3. Flip the caps, brush with the reserved marinade, and grill another 4 to 5 minutes until the flesh is tender all the way through and gives slightly when pressed.
  4. If using provolone, lay a slice on each cap during the last minute and grill covered until melted.
  5. Toast the split buns cut-side down on the grill for about 1 minute, until golden.
Assemble
  1. Stir the mayonnaise, remaining minced garlic clove, and lemon juice together in a small bowl for the aioli.
  2. Spread aioli on both cut sides of each bun. Layer arugula, a grilled portobello cap, sliced tomato, and red onion on the bottom half.
  3. Close the burgers and serve while the mushrooms are still warm.

Notes

  • Scrape out the gills before marinating to prevent a soggy burger
  • Marinate at room temp for 15 minutes, or up to 24 hours chilled
  • Always grill gill-side down first
  • Toast buns cut-side down for structure against the juicy mushroom
