Ingredients

  • 2 thick slices bread sourdough, multigrain, or gluten-free
  • 3 –4 tbsp tahini smooth, well-stirred
  • 1 ripe banana sliced
  • 2 tsp date syrup or honey/agave
  • Pinch of flaky sea salt
  • 1 tsp sesame seeds optional, for crunch
  • Pinch of cinnamon optional

Method

  1. Toast bread slices until deeply golden and crisp at the edges.
  2. Spread tahini evenly over warm toast, reaching close to the edges.
  3. Arrange banana slices in a single layer over the tahini.
  4. Drizzle date syrup lightly in a thin ribbon across the bananas.
  5. Sprinkle with flaky sea salt, sesame seeds, and cinnamon if using.
  6. Serve immediately while the toast is crisp and toppings are fresh.

Notes

Use ripe, spotty bananas for the sweetest flavor and soft texture. Stir tahini well before using to avoid dryness. Keep syrup light to prevent sogginess. A small pinch of salt sharpens sweetness and highlights sesame’s toasted depth.
