  • 1 cup coconut milk
  • 1/2 cup whole milk
  • 2 eggs
  • 1 vanilla bean pulp and seeds
  • 2 bananas
  • Clarified butter for frying
  • Brown sugar for sprinkling
  • Cinnamon for sprinkling
  • 1 mango diced
  • 1/2 pineapple diced
  • 2 kiwis sliced
  • 1/4 cup macadamia nuts toasted
  • Optional: whipped cream and raspberries for topping

Instructions
 

  • Prep the Batter: In a bowl, whisk together coconut milk, whole milk, eggs, and vanilla bean seeds.
  • Soak the Bread: Dip each slice of bread in the batter, allowing it to soak for a few minutes.
  • Cook the French Toast: Heat clarified butter in a skillet. Fry each soaked bread slice until golden brown on both sides.
  • Prepare the Roasted Bananas: Slice the bananas and fry them in clarified butter with a sprinkle of brown sugar and cinnamon until caramelized.
  • Prepare the Fruit Topping: Mix diced mango, pineapple, and sliced kiwi in a bowl.
  • Assemble and Serve: Place the cooked French toast on plates, top with roasted bananas, fruit mixture, and macadamia nuts. Add whipped cream and raspberries if desired.

Notes

  • For a vegan version, substitute eggs with your favorite egg alternative and use only coconut milk.
