Wild Rice Pilaf with Cranberries and Toasted Pecans

A one-pot wild rice pilaf with dried cranberries, toasted pecans, and fresh herbs, simmered until the grains split and turn chewy-tender.

Ingredients
  

  • 170 g wild rice / 1 cup; rinsed
  • 2 tbsp olive oil
  • 1 yellow onion small; diced
  • 2 stalks celery diced
  • 2 cloves garlic minced
  • 600 ml vegetable broth / 2.5 cups
  • 80 g dried cranberries / 2/3 cup; unsweetened preferred
  • 60 g pecans / 1/2 cup; toasted and chopped
  • 1 tsp fresh thyme leaves, or 1/2 tsp dried
  • 15 g fresh parsley / 1/4 cup; chopped
  • 3/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Toast the pecans in a dry 3-quart / 2.8 L saucepan over medium heat, stirring, for 3 to 4 minutes until fragrant and lightly darkened. Transfer to a plate.
  2. Rinse the wild rice in a fine-mesh sieve under cold water until the water runs mostly clear.
  3. Add the olive oil to the same pot over medium heat. Add the onion and celery, cook 5 to 6 minutes until softened.
  4. Stir in the garlic and cook 30 seconds until fragrant.
  5. Add the rinsed rice, stir to coat in the oil, and toast for 1 to 2 minutes.
  6. Pour in the broth and add the thyme, salt, and pepper. Bring to a boil, then reduce heat to low and cover.
  7. Simmer for 45 to 50 minutes until the grains split open and most of the liquid is absorbed. Check at 45 minutes; if the rice is still tight and pale, continue simmering in 5-minute increments rather than raising the heat.
  8. Remove from the heat, scatter the cranberries over the rice, cover, and let stand 5 minutes.
  9. Fluff with a fork and fold in the toasted pecans and parsley.
  10. Taste, adjust salt and pepper, and serve warm.

Notes

  • Rinse wild rice well; unrinsed rice can taste slightly grassy.
  • Toast pecans before adding; raw pecans taste flat next to cranberries.
  • Check rice at 45 minutes, continue in 5-minute increments if still tight.
  • Add cranberries off heat so they plump instead of turning mushy.
